HORDENINE AS THE PRECURSOR OF NDMA IN MALT

Abstract
Hordenine can be nitrosated by gaseous oxides of nitrogen (NOx) or by nitrite at acidic pH to form N-nitrosodimethylamine (NDMA). Descending paper chromatography of an amine fraction from malt shows that a precursor of NDMA co-chromatographs with hordenine. Measurements of hordenine in malt show that it is present at levels greatly exceeding those needed to form high levels of NDMA. A rapid method for the measurement of hordenine in malt using High Performance Liquid Chromatography (HPLC) is described.
