Abstract
Accessibility of the Hydroxyl Groups in Starch for Deuterium Oxide. Previous measurements of the accessibility of starch yielded contradictionary results. Fore that reason an investigation was carried out by a new method. The OH‐protons could be exchanged more extensive than was predicted by IR‐measurements. The different results are explainable by difficulties in the quantitative evaluation of the IR‐spectra.This publication has 9 references indexed in Scilit:
