Abstract
A method was developed for the preparation of αS1-casein A from whole casein containing the mixed variant αS1-casein AB. It involved selective degradation of αA1-casein B by pepsin or rennet and isolation of αA1-casein A from the mixture of degradation products by DEAE-cellulose chromatography.Keywords
